The new vacuum packers have the vacuum PLUS feature, that is to say, the possibility of programming 10” of additional vacuum when 99% vacuum is selected. This option enables you to extract air from the chamber for a few seconds more and, in this way, to remove a higher quantity of air from the main ingredient.
This function is ideal for subsequent vacuum cooking as, this way, during cooking, the product doesn’t have air trapped inside it to remove. In this manner, a higher shelf life of the product is achieved along with a more precise and uniform cooking of said product. In cutting-edge cuisine, this function allows us to obtain surprising results such as transparencies and osmosis.
CHEF’S NOTE: The gentle decompression of the chamber is a highly useful process. It allows us to respect the shapes of a product, be it something as delicate as foie gras.
