Conservas Maisor is located right in the heart of the Getaria Port. Run by the Iribar sisters, who inherited the profession from their Aunt Sorkunde Iribar, founder of the company, they produce canned fish of the highest quality from the Cantabrian Sea in a completely artisanal manner.
We visited their well cared for point of sale and small workroom. They showed us the handmade work that goes into the canned anchovies in oil. We had the chefs invited by Kitchen Bridge take a seat in the workroom, so they could prepare anchovies themselves for tasting.
