A new edition of San Sebastián Gastronomika is approaching. This year's congress will be held from 7th to 10th October and will be dedicated to the "20 years of gastronomic avant-garde: the start of the revolution". 20 years ago, a revolution started that has changed the world – that of Spanish gastronomy. 20 years ago, in San Sebastian, a culinary mythology was born, based on freedom and a borderless perspective that not only turned cooking upside down, but also transformed gastronomy into a global experience.
Like in the previous editions, Sammic will be present at "alta", "market" and "off" sections.
First of all, Sammic is an official partner of the congress and will lend its equipment to the backstage kitchen of "Alta" congress.
At the fair or "Market", Sammic will be present with its own stand, where the visitors will be able to see & touch what's new at Sammic. The visitors will be able to see SmartVideTrack, a new sytem that allows to control cooking or regeneration times portion by portion in a sous-vide bath, in action.
Last but not least, at "Off" section, our corporate chef Enrique Fleischmann will give a workshop about the "new ways of organizing work with sous-vide and low-temperature". Simulating the service of a restaurant, he will offer a tasting menu as a demo of the new SmartVideTrack tracking system.
SmartVideTrack is a new development that belongs to SmartVide family. It allows to control, portion by portion, each bag that is being cooked or regenerated in the sous-vide bath. All this, thanks to a smart label system combined with an interactive program and interactive screen.
